Chicken + Veggie Stir Fry

This super easy Chicken + Veggie Stir Fry is perfect for a quick weeknight dinner!  I like to make things as simple as possible for weeknight dinners and using a ginger paste and stir fry sauce do exactly that.  If you enjoy the delicious flavors of an asian dish, then you definitely need to add this to your dinner rotation.


  • 1 lb boneless, skinless chicken breast cut into 1 inch cubes
  • salt and pepper to taste
  • 2 tbsp olive oil 
  • 2 cups broccoli florets
  • 1/2 cup white onion diced
  • 1/2 cup carrots strips cut in half ( I prefer over baby carrots)
  • 2 tsp ginger paste
  • 2 garlic cloves minced
  • 1/2 bottle of Stir Fry sauce
  • 1 tbsp of sesame seeds


  • Add one tablespoon of olive oil to a large skillet or wok and heat over medium high heat.
  • Add chicken and cook for 3 to 5 minutes or until cooked through.
  • Add ginger paste to cooked chicken and stir to cover all chicken.
  • Remove chicken from skillet and place aside.
  • Reduce heat to medium and add remaining tablespoon of olive oil to the skillet.
  • Add broccoli, carrot sticks and onion to skillet, stirring occasionally.  Cook until crisp tender.
  • Add garlic, cooked chicken and Stir Fry sauce in the skillet and stir gently to combine.
  • Bring to a boil, stirring occasionally, and let boil for one minute.
  • Serve over rice, lo mein or zoodles and sprinkle sesame seeds on top.
